Mac Salad.

We are having Hamburgers for supper. Hubs wanted Hawaiian Mac Salad as a side, so, I made some. We didn’t have potatoes, so it’s not my Grandma’s Potato Mac Salad. Instead, I made what I call restaurant style Mac salad.

And to my dismay, I did not have macaroni in the pantry! I had to improvise and use the salad pasta, or what I call mini tube pasta.

Add-ins were simple: Grated carrots, peas, and chopped onions.

Once the pasta has been cooked, drain it, add to a bowl along with 2 tbsp Apple Cider Vinegar and the add-ins.

The “Sauce” is simply 2 – 2-1/2 cups cups Mayo, 1/4 cup milk, and a little sugar.

Mix the sauce into the pasta, stir it up, add salt and pepper to taste, then chill in the fridge. The longer, the better.

And that’s it. No hard boiled egg on this version. So Ono and such a comfort dish, especially if you’re from Hawai’i!

Ikigai

I am currently reading this book by Alicia Mori called “Ikigai: The Japanese Philosophy to Improve Healt, Work and Relationship”.  It was the book that was part of the Kindle Unlimited.  I actually wanted to read the Hector Garcia book “Ikigai: The Japanese Secret to a Long and Happy Life” but it wasn’t part of Kindle Unlmited.

I just started it tonight so I’m only a couple pages in.  It received a good rating on Amazon and I like these thought provoking, self improvement type of books.

Ikigai essentially means “What is your reason for being?”.

Takashi Murakami “Ego”

My buddy Chris posted some photos of a book he purchased about Takashi Murakami. I adore Murakami’s work so I asked him the name of the book. He said the book was called “Ego “. I immediately went on to Amazon and purchased the book, and lo and behold, it arrived today! Talk about quick shipping.

The book is 287 pages and full of photos of Murakami’s art. I can’t wait to read it!

Pork Fried Rice prep work. Dishes, dishes, dishes!

We had leftover pork so I decided to make pork fried rice.

There is a lot of prep work before making the fried rice but it is kind of therapeutic chopping all the vegetables and garlic, and measuring out all the liquids.

Once you get going you really get going and when it’s all over, this is the aftermath. Look at all those dishes.

But the end result was totally worth it!

Tonight’s version was basically using leftover and extra items in the fridge; Pork, Onions, Carrots, Peas, Green Onion, Jalapeno Peppers, and Eggs.

The sauce was primarily soy sauce, and splashes of oyster sauce, sesame oil, and Xioaxing wine.

Jonny Cota Scarf

The second piece that I purchased from the Tim Gunn / Heidi Klum Amazon series “Making the Cut, is this Jonny Cota scarf.
This scarf is huge! It’s made out of 100% rayon. I love the dual butterfly/face motif. The scarf is very soft and it will be perfect for airplanes if and when I travel, and also for sitting around the house when I want a soft cover up. The butterfly motif/face is striking and really pops and stands out!

Jonny Cota shirt

If you watched “Making The Cut” on Amazon, you know that Jonny Cota won the inaugural season. I ordered 3 pieces from the collection. The first piece ended up being a counterfeit, who h Amazon proactively credited. The other pieces are authentic Jonny Cota studio pieces. This is the shirt in black. The interesting part of the shirt is the long straps. I’ll have to wear it to see if the straps are bothersome, and I have to be carefully going on eacalators, elevators or through openings that close! I first purchased a size medium, but it was too snug so I exchanged it for a size Large. The shirt is 70% bamboo and 30% organic cotton. I’m looking forward to wearing the shirt this fall!

Cinnamon Pepper Brownies

Dessert! This is my favorite hack to jazz up boxed brownie mix.  Take your regular box brownie mix, follow the mix instructions, then add a smidge of cream, a tsp or more of Saigon cinnamon and about 1/2 tsp of cayenne pepper and smoked jalepeno pepper. Eat it warm and you’ll faster taste the cinnamon, and then you’ll feel the warmth from the papers at the back of your throat! Add some whipped cream to balance out the chocolate. Delicious!
